Working from home? If so this sandwich makes a quick and delicious lunch. It takes about 15 minutes in total, or you can cook up multiple breasts and eat the leftovers for lunch! This sandwich also goes great with some avocado on it or fresh tomatoes, if you can have those!

Rosemary Sweet Potato Fries

These baked sweet potato fries make for a healthy side burgers and meatballs. When cooking with this recipe, make sure you crush the rosemary beforehand, this releases the oils and makes it more flavorful! I used vegan mayo as my condiment of choice to go along with it, but whatever you prefer, works!

Fish Tacos

This recipe is great for any hot summer day! I used corn tortillas that I heated up in a skillet on the stove top, but other types of tortillas work well too. Also cojita cheese can be substituted for feta if that is preferred!

Thai Chicken Wraps

This recipe is a great summertime recipe. The cilantro and basil makes it nice and refreshing, perfect for dinner of lunch. Note: fresh basil can be a trigger for some people's acid reflux so it is listed as optional, but it really does add some great flavor to the dish.

This delicious Indian yogurt sauce made with refreshing cucumber is the perfect summer side! It can be served as dip for breads, like naan, or put over top of grilled chicken or even on a sandwich! I personally prefer it without adding feta cheese to it, but my husband prefers it with, it definitely gives it more of a sour taste.

Did you know Swedish Meatballs are actually Turkish? I didn't until recently! My husband loves this dish, it's a great comfort food dish for any day of the week! The coconut cream really gives it the desired thickness and creaminess, and you can't taste the coconut!
