Sautéed Beet Greens

This is flavorful way to use those beet greens from your garden, you can also use Swiss chard or collard greens and it turns out great!

Yield: 2 servings

Prep time: 5 minutes

Total time: 15 minutes


Bunches of greens from 3 beets, cut into 2-inch pieces*

Zest from 1 lemon

1 | shallot, diced

½ tbsp | olive oil

Parmesan Cheese (optional)

Salt to Taste


  1. Add oil to a skillet over medium-high heat. Once oil is hot add in the shallots and greens and cook for 5-8 minutes until greens are wilted and onions are translucent, stirring frequently.
  2. Turn off the heat and add in the grated lemon zest and salt to taste, give it a nice stir, top with Parmesan cheese and serve!

*You can also include stems as well, I just choose not to!
