
Working from home? If so this sandwich makes a quick and delicious lunch. It takes about 15 minutes in total, or you can cook up multiple breasts and eat the leftovers for lunch! This sandwich also goes great with some avocado on it or fresh tomatoes, if you can have those!

Ingredients
1/3 lb | chicken, pounded to about 1/2 inch thickness
1/3 cup | baby mixed greens or spinach
1/2 tsp | pesto, homemade or store bought*
1 tbsp | feta, crumbled
paprika
dried basil
dried oregano
salt
Bread of your choice
Directions
- Take the chicken breast and dust a small amount of the paprika, dried basil, oregano and salt.
- In a skillet over medium-high heat, drizzle a bit of olive oil and add the chicken to the pan. Cook each side until brown, about 5-7 minutes per side.
- When chicken is completely cooked, and reached a temp of 165 degrees internally, begin to assemble the sandwich.
- I suggest putting the feta on the bottom bun or piece of bread of the sandwich, so it doesn’t fall out, then add the chicken, greens of your choice (I used baby mixed greens) pesto and then the top bun or piece of bread, and enjoy!
*I personally use store-bought pesto that has garlic listed as one of the last 3 or 4 ingredients.
