This soup is a great Fall/Winter staple. It’s a super easy and healthy slow cooker meal, that makes enough for the whole family!

Ingredients

1 lb | chicken breast

3 | carrots, diced

1 cup | celery, chopped

1 | large shallot, diced

1 cup | wild rice

8 cups | chicken bone broth

1 tbsp | fresh ginger, grated (optional)

1 tbsp | dried rosemary, crushed

1 tbsp | dried thyme

1 tsp | dried sage

1/2 tsp | asafetida

2-3 | dried bay leaves

Salt to taste

Directions

  1. If your chicken is one large breast, cut in half, to allow for more even cooking, and then add chicken to the slow cooker.
  2. Now add all the rest of the ingredients, stir together and cook using one of the following methods:
    • Cook on high for 4 hours, take the chicken out, and shred it and serve!
    • Cook on low for 7-8 hours, the chicken will need to be removed after 4-5 hours and shredded, otherwise it will become too dry. Add the chicken back in for the last 20 minutes, and serve!
