
This soup is a great Fall/Winter staple. It’s a super easy and healthy slow cooker meal, that makes enough for the whole family!

Ingredients
1 lb | chicken breast
3 | carrots, diced
1 cup | celery, chopped
1 | large shallot, diced
1 cup | wild rice
8 cups | chicken bone broth
1 tbsp | fresh ginger, grated (optional)
1 tbsp | dried rosemary, crushed
1 tbsp | dried thyme
1 tsp | dried sage
1/2 tsp | asafetida
2-3 | dried bay leaves
Salt to taste
Directions
- If your chicken is one large breast, cut in half, to allow for more even cooking, and then add chicken to the slow cooker.
- Now add all the rest of the ingredients, stir together and cook using one of the following methods:
- Cook on high for 4 hours, take the chicken out, and shred it and serve!
- Cook on low for 7-8 hours, the chicken will need to be removed after 4-5 hours and shredded, otherwise it will become too dry. Add the chicken back in for the last 20 minutes, and serve!
