Chia pudding is a simple and easy snack, dessert or breakfast that is full of fiber and protein. It’s also easy to customize by adding whatever toppings or sweeteners that you desire!

Yield: 2 servings

Total time: 1 hour

Ingredients

4 tbsp | chia seeds

1 cup | nut or oat milk, unsweetened

1/2 tbsp | maple syrup

1/4 tbsp | date syrup*

1/4 tsp | vanilla extract or almond extract

A mixture of your favorite fruit, nuts, granola or chocolate

*You can also just use one sweetener, but I personally like the combination of date and maple syrup.

Directions

  1. In a bowl or mason jar, stir together chia seeds, the nut milk, maple and date syrup, and vanilla extract.
  2. Once it is well combined, you can pour into smaller containers or leave as is. Leave out for about 5 minutes and then stir the mixture again, to more evenly distribute the chia seeds.
  3. Put into the fridge and allow to set for at least 1 hour. If in an airtight containers the pudding can last for up to 3-5 days in the fridge.
  4. When serving top with your favorite fruit, nuts, granola or chocolate and enjoy chilled!
