
Chicken Stir-Fry with Udon and Vegetables
Udon noodles are a great addition to stir-fry, if you buy it fresh or packaged you can throw it right into the pan and it’s ready in minutes!

Ingredients
Chicken Stir Fry
1 lb. | chicken breasts, cubed
16 oz. | fresh or packaged udon noodles
½ cup | cucumbers
1 large | carrot, shredded
1 cup | snow peas
1 tbsp| sesame seeds
1 tbsp | extra virgin olive oil
1 tbsp | cilantro, chopped (optional)
Sauce
1/3 cup | soy sauce or coconut aminos
2 tbsp| peanut butter
1 tbsp| honey
1 ½ tsp | fresh grated ginger
¼ tsp | fish sauce
Directions
- In a bowl mix together all the sauce ingredients until peanut butter is not very lumpy and set aside.
- Over medium heat add the oil to the skillet and the chicken. Once chicken is cooked add in cucumbers and cook for about 2 minutes. Then add in the carrots and snow peas and cook for 3-5 minutes until snow peas are soft.
- Add in the noodles, cilantro and sesame seeds and cook for a couple more minutes for the noodles to get the flavor of the sauce. Serve hot and enjoy!
