Chicken Stir-Fry with Udon and Vegetables

Udon noodles are a great addition to stir-fry, if you buy it fresh or packaged you can throw it right into the pan and it’s ready in minutes!

Total time: 40 minutes

Ingredients

Chicken Stir Fry

1 lb. | chicken breasts, cubed

16 oz. | fresh or packaged udon noodles

½ cup | cucumbers

1 large | carrot, shredded

1 cup | snow peas

1 tbsp| sesame seeds

1 tbsp | extra virgin olive oil

1 tbsp | cilantro, chopped (optional)

Sauce

1/3 cup | soy sauce or coconut aminos

2 tbsp| peanut butter

1 tbsp| honey

1 ½ tsp | fresh grated ginger

¼ tsp | fish sauce

Directions

  1. In a bowl mix together all the sauce ingredients until peanut butter is not very lumpy and set aside.
  2. Over medium heat add the oil to the skillet and the chicken. Once chicken is cooked add in cucumbers and cook for about 2 minutes. Then add in the carrots and snow peas and cook for 3-5 minutes until snow peas are soft.
  3. Add in the noodles, cilantro and sesame seeds and cook for a couple more minutes for the noodles to get the flavor of the sauce. Serve hot and enjoy!
