This recipe is a great go-to side dish to make for yourself or company! I personally don't like it when sweet potatoes are served with sugar and made more into a dessert, but I do love a good savory sweet potato!
It's starting to cool down a bit where I live, and curry is the perfect warm food to cook in the evenings. Although I call this recipe a curry, it uses the "curry" spice mix, which is linked below, that doesn't actually contain any curry. I find that the spice curry itself not only causes issue with myself, but with many people with GERD or LPR.
This is a quick version of stroganoff that can be served over rice or pasta, and it's dairy-free! Can also be made with lean ground beef.
