
These baked sweet potato fries make for a healthy side burgers and meatballs. When cooking with this recipe, make sure you crush the rosemary beforehand, this releases the oils and makes it more flavorful! I used vegan mayo as my condiment of choice to go along with it, but whatever you prefer, works!

Ingredients
12 oz | sweet potatoes
1 tsp | dried rosemary, crushed
1/2 tbsp | olive oil (do not use EVOO, it will burn!)
1/2 tsp | salt, and more to taste
Directions
- Preheat the oven to 425 degrees Fahrenheit.
- Cut the sweet potatoes into long fry-like strips. In a large bowl add the sweet potato, crushed rosemary, salt and olive oil. Make sure the sweet potato gets thoroughly covered and then add the sweet potato fries onto a large baking sheet, lay them out so that they do not touch each other.
- Bake the fries for 30-35 minutes, turning occasionally so that all sides brown nicely. Add extra salt to taste and serve immediately with your favorite acid-friendly condiment. I served mine with a side of vegan mayonnaise.
